Easy Spring Rolls

These are one of my favorite things to make that are easy, but look impressive.

They can be made vegan, dairy free, gluten free.

NOTES: for a video on how to roll them, I have posted one on my instagram. Also they are best consumed within an hour of making, because the rolls stick together.

Ingredients:

  • 1 package of Vietnamese Brown Rice Spring Roll Wrappers (can be purchased at Whole Foods or amazon/ other types of spring roll wraps will work as well)

  • 3 carrot

  • 1 English cucumber

  • 2 avocados

  • 1 head of cabbage

  • 1 bunch of green onions

  • crushed nuts

  • Optional: cooked chicken or shrimp

Recipe:

Shred or peel carrot and cucumber using a vegetable peeler.

Cut cabbage and green onion into small pieces.

Cook and cool your protein.

ROLL Steps:

  1. Take one wrapper and dip it in the water to soften.

  2. Lay your wrapper flat on a clean cutting board. Add a small amount of your desired ingredients to the wrapper, an inch from the edge. Build them smaller than you think to start.

  3. Hold your ingredients toward the edge and roll away from you once. Tuck the sides in and tap them down. Continue to roll. Press the edge down to seal.

  4. EAT! I dip mine in coconut aminos or soy sauce.
