Sweet Potato Hummus

If you cant tell already that I have been obsessed with sweet potato recently, here is a really yummy recipe for a chickpea free hummus. The lack of chickpeas makes this recipe paleo and fodmap friendly. This is something I love because not everyone’s stomach agrees with chickpeas. Please enjoy this fun twist on hummus!

Ingredients:

  • 1.5 cups sweet potato (about 2 medium sweet potatoes)

  • 1/4 cup lemon juice (about one large lemon)

  • 1.5 tablespoons tahini

  • 3 cloves of garlic

  • 1 tablespoon olive oil

  • 1 teaspoon cumin

  • 1 teaspoon dried onion

  • paprika!

Recipe:

Wash and cut sweet potatoes into 1 inch pieces. Boil until a fork easily goes all the way through.

Cool and remove the skin from the potatoes.

Take 1.5 cups of sweet potato and put it in your food processor (or blender). Blend until no chunks remain.

Add tahini and lemon juice to your sweet potato and blend for 30 seconds.

Add garlic cloves (can leave out if you have dietary restrictions), olive oil, cumin and dried onion. Blend another 30 seconds until smooth.

Salt and pepper to taste. Top with a sprinkle of paprika!

Eat! I eat mine with cucumbers or on a sandwich as a sweet added flavor.
