Sweet Potato Crust Pizza

caramelized onions, mushrooms, almonds, and turkey bacon

Ingredients: 

  • 6 cups shredded sweet potatos

  • 3 eggs 

  • 1.5 tablespoon olive oil 

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

Recipe:
Shred 3-4 medium sweet potatos with a thick cheese grater. Drain the liquid. 
Add all the ingredients together and mix so all potatoes are coated. Press the “dough” on to parchment paper to create a thin layer of “crust.” Bake on 450 for 15-20 minutes until edges begin to brown. 
Remove crust and add toppings! I used @kitehillfoods Riccota vegan cheese, slivered almonds, turkey bacon, mushrooms, and grilled onions. Put back in the oven for 5 minutes (until all ingredients are warm). Remove and eat!
